Hanoi Dandan Noodle Recipe

Chinese wheat noodles are tossed with OohNami’s Spicy Gochu Chili Sauce and savory ground pork, creating a bold, spicy, deeply satisfying bowl.

Finished with crisp vegetables, roasted peanuts, and fresh herbs, this is a vibrant, Asian-inspired take on classic dan dan noodles with rich flavor in every bite.

Ingredients

  • 4 bunches baby bok choy, halved lengthwise
  • 454 g ground pork
  • 6 cups Chinese wheat noodles, prepared according to package instructions
  • ¾ cup OohNami! Spicy Gochu Chili Sauce
  • ¼ cup green onions, thinly sliced on an angle
  • 2 tablespoons roasted unsalted peanuts, chopped

Directions

  1. Dry roast the bok choy
Heat a large sauté pan on high. Place each piece of bok choy cut-side down onto the dry pan.
Roast until charred, 2–3 minutes per side.
Remove from heat, let cool slightly, and slice each piece on a ½-inch angle.
Pro tip: Allowing the bok choy to char without oil adds smoky flavor and prevents sogginess.
  2. Brown the pork
In the same sauté pan over high heat, add the ground pork.
Cook for 10–15 minutes, stirring often and breaking it into crumbles, until browned.
  3. Combine noodles, sauce, and bok choy
Once the pork is browned, add:
    OohNami! Spicy Gochu Chili Sauce
    Cooked Chinese wheat noodles
    Sliced roasted bok choy
Gently toss to combine and cook for 2–3 minutes to meld the flavors.
  4. Finish and serve
Remove from heat and portion the noodles into bowls.
Garnish with sliced green onions and chopped peanuts.
    Serve immediately.
